THE DISTILLATION PROCESS: HOLANDAS AND DESTILADOS
What sets Spanish brandy apart from other grape-based spirits is its distinct two-part distillation process. Instead of relying on a single distillate, two very different components are used:

I Holandas: These low-strength, aroma-rich distillates (60–65% ABV) form the flavorful backbone of Spanish brandy. They are slowly distilled to preserve the wine’s natural characteristics.

I Destilados: These are higher-proof, more neutral distillates (84–86% ABV) that add balance, structure, and refinement. When blended with Holandas, they contribute to a smoother, rounder spirit.


Together, Holandas and Destilados create a layered, aromatic profile that infuses the brandy casks with notes of soft vanilla, caramelized fruits, and subtle oak.
